  • ½ cup softened butter
  • 1¼ cups sugar
  • 2 eggs

  • 2 cups flour
  • ½ teaspoon salt

  • ½ cup milk
  • 2 cups Saratoga Farms Freeze-Dried Blueberries
  • 3 teaspoons sugar (for sprinkling on top)

Preparation

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cream the butter and 1¼ cups of sugar until light and fluffy.
  3. Step 3: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Step 4: In a separate bowl, sift together the flour, salt, and baking powder. Gradually add this to the creamed mixture, alternating with the milk.
  5. Step 5: Crush ½ cup of freeze-dried blueberries with a fork and mix them into the batter. Gently fold in the remaining whole berries.
  6. Step 6: Line a 12-cup muffin tin with cupcake liners and fill each ¾ full with batter. Sprinkle the tops with 3 teaspoons of sugar.
  7. Step 7: Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let the muffins cool for at least 30 minutes before serving.

Once the muffins have cooled completely, you can also freeze them for later! Store them uncovered to maintain their moist texture for a few days, but they'll likely be gone before then!
